Nancy's Hush Puppies



 Living near the Gulf means lots of fishing trips, and, of course, delicious fish fries!  These melt-in-the-mouth Hush Puppies were created as the perfect compliment for the "Catch of the Day"!!  You may serve them with fish or any main dish, eat as a dessert, or both.  You may want to double the batch - my family says they are "simply to die for"!!


Ingredients:
1 1/2 Cup Corn Meal Mix
1/2 Cup Self-Rising Flour
1/4 Cup Granulated Sugar
1 Cup 2% Milk
2-4 Tablespoons Water

Canola Oil 
Confectioner's Sugar 


Directions:
Heat canola oil in a deep fryer to 375 degrees.  Use a large spoon to mix corn meal mix, self-rising flour, and granulated sugar.  Gradually stir in the milk. Add water, 1 tablespoon at a time, until the mixture can be scooped with a spoon. Fry hush puppies (a few at a time) by dropping a scant tablespoonful into the deep fryer basket which is submerged in hot oil.  (Mixture enlarges as it fries.)  Fry until golden brown, about 2 minutes.  Remove deep fryer basket from oil, and use tongs to transfer hush puppies to a large bowl or basket lined with several layers of paper towels.  Serve warm with confectioner's sugar, if desired.




Nancy's Notes:  Hudson Cream is my favorite brand of flour and corn meal mix, but it is not available in the South where we live.  When we travel back up north, we always have, "Buy more Hudson Cream Flour and Corn Meal!" on our To-Do List!
