This recipe that I adapted has long been a family favorite and is frequently served at family gatherings. Now, my Peanut Butter Bar Cookies are being enjoyed by my grandchildren! These delicious bar cookies pack well and are often mailed to relatives and friends. I hope this recipe becomes one of your family's favorites!
Ingredients:
1-17.5 oz. package Betty Crocker Peanut Butter Cookie Mix
1 egg
1/3 cup canola oil
1 cup Reese's Peanut Butter Chips
1/2 - 1 cup Reese's Mini-Pieces (found in the baking aisle or with ice cream toppings)
Directions:
Preheat oven to 350 degrees. pray Pam Cooking Spray in the bottom of a 9" x 13" metal rectangular baking pan.
Stir the cookie mix, egg, and canola oil with a spoon until blended. Mixture will be crumbly.
Press the mixture into the 9" x 13" pan. op with the Peanut Butter Chips and Reese's Mini-Pieces. Press the Peanut Butter Chips and Mini-Pieces gently into the batter.
Bake at 350 degrees for 16-18 minutes. Baked cookie will still be "puffy" in the middle and starting to brown and set on the edges.
Cool on a wire rack. When cool, cut into bars and store in a tightly covered container.
Nancy's Peanut Butter Bar Cookies are simply delicious with vanilla ice cream!!

Ms. Nancy's Notes:
- When mailing these bar cookies, I carefully put 1 layer of cookies into a quart freezer bag, squeeze out the air, and zip closed. The bags can then be stacked in a sturdy box. Add bubble wrap for extra protection.
- For glass pans, bake at 325 degrees for 16-18 minutes.
- Dark pans can be lined with aluminum foil and baked at 325-350 degrees for 15-17 minutes to prevent excessive browning.
- Regular Reese's Pieces can be substituted for Reese's Mini-Pieces.

These are great! Ever since I left home and went to college, my mom has made me these every year (or almost every year) on my birthday and sent them to me. Over the years, my roommates, friends, co-workers and wife have enjoyed these as well! Occasionally they were opened before I got home. Sometimes I have even hid them... haha. But not from my wife. :)
