Double Chocolate Bar Cookies

My Mom used this quick and easy recipe with only 4 ingredients to bake Chocolate Cookies, and I modified her recipe to create these delicious bar cookies. Placing the chocolate chips on top makes my Double Chocolate Bar Cookies absolutely irresistible!

Ingredients:

1 package chocolate cake mix (15.25 oz.)
1/2 cup canola or vegetable oil
2 eggs
1 cup Semi-sweet chocolate chips

Directions:

Preheat oven to 350 degrees. Grease a 9" x 13" metal baking pan.

Empty cake mix in a medium-size mixing bowl. Add eggs and oil; mix. Batter will be very thick.

Press batter into the baking pan.

Sprinkle chocolate chips on top, and press lightly into batter.

Bake at 350 degrees for approximately 18 minutes, until edges are set. Middle will be "puffy" and soft; do not over-bake! The bars will finish baking in the pan.

Let cool, cut into bars, and enjoy!

Nancy's Notes:
  • For glass and dark baking pans, you may need to adjust oven temperature and baking time.
  • You may add nuts to the batter or sprinkle on top before baking, if desired. Black walnuts are great in this recipe.
