These delicious and nutritious Oatmeal Cinnamon Raisin Cookies are definitely a kid-pleaser! Since they start with a mix, they are extra quick and easy to make. Kids love to help make and eat them!
What did we do on Day 7 of the grandkids' Spring Break? We baked cookies! I had a package of Oatmeal Cookie Mix in the pantry, and grandson Noah said he loves Oatmeal Raisin Cookies, so we took it from there!
Ingredients:
1 - 17.5 oz package Betty Crocker Oatmeal Cookie Mix
1/8 teaspoon cinnamon
1 egg
1/3 cup canola oil
2 tablespoons water
1/2 to 1 cup raisins
Directions:
Preheat oven to 375 degrees.
In a medium mixing bowl, stir cookie mix and cinnamon. Add 1 egg, oil, and water. Stir until all ingredients are blended. Mixture will be very stiff!
Add raisins and stir.

Ms. Nancy's Raisin Tip:
If your raisins seem hard and dried out, rehydrate them! Heat about 1/4 cup of water in the microwave until boiling and drop the raisins in for about 30 seconds to 1 minute. Stir gently. They will plump back up!

Drop dough by rounded teaspoonful onto an ungreased cookie sheet. Bake at 375 degrees for 10-12 minutes, until slightly browned. Cool 1 minute, and remove to a plate to cool completely.
Store in an airtight container.
Yield: 3 dozen
