I love Potato Soup, one of my favorite "comfort foods"! Unfortunately, my traditional recipe had too much sodium and butter, making it a "No-No" on my medically-advised, restricted diet. Try my new, healthier version: low-sodium, low-fat, and high flavor! It's easy, fast, and creamy delicious! Pass the crackers!
Creamy "Healthy" Potato Soup
Ingredients:
4 large or 5 medium white potatoes
water (enough to cover the potatoes in the pot)
1 cup chopped celery
1 cup chopped sweet onions
2 tablespoons butter
32 oz. low-sodium chicken broth
1 cup 2% milk
1-1/2 cups potato flakes
Directions:
Peel and rinse potatoes. Cut into cubes. Put into a large cooking pot (at least 6 quart). Add just enough water to cover the potatoes.
Add 32 oz. of chicken broth. Bring to a boil, and reduce heat to medium or medium-high (to maintain a boil).
Meanwhile, combine chopped celery, chopped onions, and butter in a micro-proof glass bowl. Cover and cook on high in the microwave for about 8 minutes.
Stir the celery and onions, and add them to the potatoes which are cooking in the large pot.
After potato mixture has cooked for a total of 20 minutes, add milk and potato flakes. Stir, and return to a boil. Cook for about 5 additional minutes, stirring constantly. Enjoy!
This soup is great as is, or you may add shredded cheese. Additional seasonings may be added, according to taste and diet.
