Beef Roast


Beef Roast, Pot Roast, or Roast? No matter what you call it, this recipe that I learned from my Mom is a family favorite. It's easy to make, delicious, and nutritious; and clean-up is a breeze! Try it with your family! Oven and Slow Cooker directions are included.



Ingredients:

Chuck Roast, about 3 lbs.
1 large or 2 medium sweet onions
4 -6 medium potatoes (or 4 large)
2 cups baby carrots


Directions:

Preheat oven to 425 degrees.

Line a 9" x 13" x 2" baking pan with 2 layers of Heavy Duty Reynolds Wrap (aluminum foil - wide).

Rinse the roast under running water, and add it to the pan. Add about 1/2" water. Place another piece of Heavy Duty Reynolds Wrap on top of the pan, and seal tightly. Bake at 425 degrees for about 1-3/4 to 2 hours.


After about 1-1/2 hours, prepare the vegetables. Peel and slice the onions. Peel the potatoes, and cut in half. Rinse all vegetables, and drain.

After about 1-3/4 to 2 hours, remove the roast from the oven. Carefully lift one corner of the foil to allow steam to escape. Finish removing the foil. Use tongs to turn the meat over. 


Always check the meat for doneness!
This meat is definitely done!

Add the prepared vegetables to the pan. I like to put the potatoes and carrots in the broth and onions on top of the meat. 

Replace the foil on top of the pan, and seal tightly. Bake an additional 50 minutes to 1 hour.


Carefully remove the foil, and it's time for dinner!

This perfect meal serves a family of 6,
with leftovers!

Slow Cooker directions:

After rinsing the meat, place it in a large Crock Pot. Add about 2 inches of water. Add the vegetables to the pot. Cover and cook on High about 5-6 hours, or on Low for 10-12 hours. Carefully remove the lid, and enjoy!


Nancy's Notes:

  • (Optional)You may brown the meat in a large skillet prior to baking.
  • The meat may be seasoned prior to baking, and the vegetables may be seasoned, also. Since I am on diet restrictions, I prefer to bake this meal unseasoned, and let everyone else season their food at the table. That way, we are all happy!
  • I usually discard the broth, but it can be used for gravy or cooking noodles. (Remove the grease first)
  • Green beans and/or a salad go great with this meal.
  • Leftovers can be warmed and eaten as is, or you can add a thickened broth and create a stew. 
  • The double layer of Heavy Duty Reynolds Wrap allows for easy and fast clean-up!
