Banana Cake is a favorite at gatherings with my husband's family. The bananas make the cake deliciously moist, and it has just the right amount of sweetness. Caution: It's so good, someone might try to steal it!! Recipe, directions, and photos included.
Ingredients:
2 Layer Yellow Cake (baked according to package directions)
6 ripe bananas
5 tablespoons granulated sugar (or amount needed for desired sweetness)
Confectioner's Sugar (Optional)
Directions:
Bake Yellow Cake according to package directions in 2 pans.
Split each layer into 2 layers using a knife and/or dental floss. (total 4 layers)
Note: You can also bake the cake in a 9" x 13" pan, and cut it in half crosswise before splitting into 2 layers.
Peel 6 ripe bananas. Cut into chunks, and place in a medium size bowl.
Add sugar to the bananas. Use a potato masher to mash the bananas. Stir, making sure the sugar is evenly distributed.
Put one layer of the cake on a serving plate. Add 1/3 of the banana mixture. Continue adding layers of cake and banana mixture, leaving the top layer of cake plain.
Optional: Place a doily on top of the cake. Dust with Confectioner's Sugar.
Carefully remove the doily.
Wrap with aluminum foil and store in the refrigerator.
