Easy Iced Peanut Butter Oatmeal Bars


Calling all peanut lovers who also have a "sweet tooth" (like me)! My Easy Iced Peanut Butter Oatmeal Bars recipe starts with a mix and will leave you begging for more! Recipe and photos are included. Enjoy!

I love my Mother-In-Law's Peanut Butter Bars with Peanut Butter Frosting, so I decided to experiment with an easier and quicker version. My recipe starts with a mix. The results are amazing!


Bar Ingredients:


17.5 oz pkg. Peanut Butter Cookie Mix (I use Betty Crocker.)
2 T water
1 cup quick oats
1/3 cup canola or vegetable oil
1 egg


Bar Directions:

Preheat oven to 350 degrees. Spray Pam in the bottom of a 9" x 13" metal cake pan.

In a medium mixing bowl, stir cookie mix and oats together. 



Add the water, oil, and egg. Stir until blended.



Press into a 9" x 13" pan.

Bake about 16-18 minutes.  Edges will be brown, and middle will be puffy.



Cool in the pan on a cooling rack.



Frosting Ingredients:



2 T butter, softened
1/4 cup creamy peanut butter
1 teaspoon vanilla
1-1/2 cups Confectioner's Sugar
6-7 teaspoons milk

Frosting Directions:

In a medium sized bowl, combine the butter, peanut butter, and vanilla. Alternately add Confectioner's Sugar and milk, mixing well on low speed until mixture is easily spreadable.


Spread frosting on the cooled peanut butter bars. When icing "sets", cut into bars and serve.


These bars are great as is, or you can also eat them with ice cream (my favorite!).

They also are great for mailing to friends, family, and loved ones!
