Remember No-Bake Cookies? That recipe was a favorite of mine until the dreaded day when I had to give up chocolate. Peanut Butter Oatmeal Candy/Topping is my delicious adaptation of that chocolate dessert. It can be eaten as candy, or it is a special treat when poured over vanilla ice cream. Super easy and yummy delicious!
Ingredients:
3/4 stick butter or margarine
1-1/2 cups granulated sugar
1/3 cup milk
1 cup peanut butter (creamy or crunchy)
2-1/2 cup minute oats
1 teaspoon vanilla
Directions:
Measure minute oats, peanut butter, and vanilla. Set aside.
Put butter, sugar, and milk in a medium sized saucepan (about 3 quarts). Chop butter, and stir over low heat until butter is melted. Continue cooking and stirring until mixture comes to a complete boil. You may raise heat a little, but watch carefully!
Remove pan from heat. Add peanut butter, minute oats, and vanilla. Stir until blended.
For candy, drop spoonfuls onto waxed paper. It will harden as it cools.
When cool, store layers on waxed paper in an airtight container.
For ice cream topping, have bowls of vanilla ice cream scooped and ready. Spoon warm mixture over ice cream and enjoy!
Remainder may be dropped on waxed paper as candy.
