Haystacks

Haystacks - this crunchy, munchy dessert is unbelievably quick and easy to make, with only 4 ingredients. How could anything this easy be so delicious? It's kid-friendly, so get the family involved. Enjoy!

I first heard of Haystacks when my oldest son Jeff was in third grade. His class made this delicious dessert at school, and he kept talking about it. I just had to have the recipe! 

When I asked and his teacher sent me the recipe, she wrote to use a heaping tablespoon of peanut butter. I measured, and my heaping tablespoonful is 1/3 cup, so I added that to my directions. 

The whole family loved them, and this recipe has been a family favorite ever since.

Ingredients:

1/3 cup creamy peanut butter 

6 oz. butterscotch chips (1 cup)

1 cup peanuts (I use dry roasted, lightly salted.)

oz. can of Chow Mein Noodles (or half of a 12 oz. package, about 2-1/2 cups)

Directions:

Melt the peanut butter and butterscotch chips over very low heat, stirring constantly. 

Remove from heat, and stir until smooth. 


Add chow mein noodles and peanuts. Mix until well coated.


Drop by spoonfuls on foil-lined baking sheets or wax paper lined baking sheets.


Refrigerate until set. 

Store in a tightly sealed container.
