Are you on a diet? If so, do you feel deprived if you don't eat dessert? Usually diets and Cheesecake do not go together. This delicious Cheesecake made from Greek Yogurt will convince you that you can be on a diet, and have your Cheesecake too!
Ingredients:
3 large eggs
3 Tablespoons Stevia or Splenda
1 and 1/2 teaspoons Imitation Vanilla
3 cups non-fat Plain Greek Yogurt
1 small box Fat Free/Sugar Free Instant Cheesecake Pudding mix
Directions:
Preheat oven to 350 degrees. Spray a 9" pie plate or spring-form pan with a non-fat cooking spray.
In a medium mixing bowl, use a mixer on low speed to blend eggs, vanilla, and Stevia.
Add Greek Yogurt and pudding mix. Combine on low speed. Mix at medium speed until mixture is smooth.
Pour mixture into a deep pie plate. Use a spatula to smooth the top.
Bake 30 minutes.
Cheesecake will be "set" on top, and edges will be slightly browned. Let cool at room temperature for about 1 - 2 hours.
When cool, cover with plastic wrap and refrigerate several hours or overnight.
Cheesecake may be enjoyed plain or with your favorite toppings. Toppings may include fresh fruit, fruit canned in 100% juice, "lite" pie filling, etc.
Please note:
This Cheesecake serves 8, so 1/8 of this cheesecake = Zero Points.
It looks good, doesn't it? But, more importantly, how does it taste? My husband says it is delicious, and he should know. He has lost a lot of weight while enjoying desserts such as this!

Very interesting! With these ingredients, this dessert must be very low in calories, fat, and carbs. I may have to try this.
