Do you love Lasagna but hate the carbs? I adapted this delicious "noodleless" version from a recipe in an old microwave cookbook. It is low calorie, Net Zero Weight Watcher points, and very low acid, making it Interstitial Cystitis Friendly. That's Italian!
Ingredients:
6 cups sliced zucchini
1/4 cup water
1 lb. ground turkey (99% fat-free)
1 small sweet onion, chopped
1 - 15 oz can Contadina tomato sauce
1 1/4 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/4 to 1/2 teaspoon salt
1 - 4 ounce can sliced mushrooms (drained)
12 ounces fat-free cottage cheese (do not drain)
1 egg, slightly beaten
2 oz shredded mozzarella cheese
Parmesan cheese (optional)
Directions:
Step 1:
Place sliced zucchini and 1/4 cup water in a microproof bowl. Cover and cook on High for 6-7 minutes. Drain well. Press with a spatula and drain again. Set aside.
Step 2:
In a medium skillet, brown ground turkey and onion, chopping with a spatula as it cooks.
Tip: You may need to add a small amount of water as it cooks.
Drain.
Add tomato sauce, Italian seasoning, garlic powder, and salt. Mix well and set aside.
Step 3:
Combine cottage cheese, egg (slightly beaten), and 1/3 cup mozzarella cheese. Set aside.
Step 4:
Layer 1/2 of the cooked zucchini in a large microproof baking dish. (Mine is 12"x9"x2".) Add 1/2 of the meat mixture followed by 1/2 of the cottage cheese mixture.
Add remaining zucchini, meat mixture, mushrooms, and cottage cheese mixture. Sprinkle remaining mozzarella cheese on top.
Tip: 1/3 cup Parmesan cheese may be added at this point, or it may be passed at the table.
Cover and micro-cook on high for about 10-12 minutes.
Tip: Cooking times may vary due to individual microwaves.
Let stand (covered) for about 10 minutes before serving.

- Zucchini Lasagna is a delicious, healthy meal by itself!
- Of course, Rolls and Italian Garlic Bread go well with this recipe, as well as additional vegetables or salad.
- My husband likes to add hot banana pepper rings.
