Quick and Easy Cilantro-Lime Rice



Are you a rice lover? We certainly love rice in our family, and Cilantro-Lime Rice is a favorite, especially at Chipotle's.  Try my recipe. It's a "Tried and True" family favorite! 

My first attempts at making Cilantro-Lime Rice were complete disasters. I read many recipes online and combined a couple of recipes using long grain white rice. Yuk! It came out "too sticky". I tried fresh cilantro, and it didn't look right. One attempt had too much lime juice, and it was so sour that it sort of pulled at your eyes! Do you know what I mean? Of course, the grandkids wouldn't eat it!

I was determined to master this! I tried again, and it was better. The grandkids would finally eat it!

I kept experimenting with ingredients and amounts until I finally came up with this recipe that 2 of my grandsons say is "really close" to Chipotle's rice! They love it! They even like to take the leftovers home for their school lunches. That's good enough for me!

Now "Quick and Easy" Cilantro-Lime Rice is a family favorite!



Ingredients:



2 cups Minute Rice

2 cups water

1/4 teaspoon salt

1 Tablespoon butter

2 teaspoons Crushed Cilantro Leaves

2 Tablespoons Lime Juice


Directions: 

In a medium saucepan, bring 2 cups of water to a boil. 

Add the Minute Rice and stir. When the water starts to boil again around the edges, cover, and turn off the heat. Let set 5 minutes and stir.

Add butter, salt, Crushed Cilantro Leaves, and Lime Juice.

Stir until butter melts and all ingredients are evenly mixed.
